Foodie Friday: Golden-Glazed Chicken

This was after it had baked for 45 minutes.
Mmmm, chicken! This is an easy, delicious, savory-sweet recipe that was given to me by my sister-in-law Mary Ann when I babysat my nieces one weekend. She made sure to leave a recipe that a newlywed with no parenting experience could pull together with minimal effort.

It was a winner and has become a family favourite, though it goes by a couple of different names, including Honey-Mustard Chicken and Curried Chicken. Here's the recipe.


INGREDIENTS
2 lbs chicken pieces, skin-on
1/2 cup honey
1/4 cup butter
1/4 cup Dijon mustard
2 Tablespoons regular yellow mustard
2 teaspoons curry powder
2 teaspoons lemon juice
1 teaspoon salt
1 clove garlic, minced

INSTRUCTIONS

Preheat oven to 350 F. Lay chicken pieces in casserole dish.

Combine sauce ingredients (everything except the chicken) in a sauce pan. Bring to a boil, then remove from heat.

Pour sauce over chicken pieces and bake for 1 hour.

Drain excess fat and serve the remaining sauce with the meal.

This was after it had baked the full hour. Served over oven-roasted butternut squash.
Best served with basmati rice and a bright vegetable.

  1. Oh this looks soooo good!! I need some new chicken recipes after a summer of mostly just having BBQ sauce. This seems perfect for moving into fall weather.

    1. It is definitely a cold-weather meal. And I hear you about the non-stop bbq-ed dinners. One does grow tired . . .
